Fleury is a small producer in south of Troyes (Aube). They are one of the first to use organic and biodynamic practices, meaning no added sulfites, no yeast or chemicals. The result is an incredibly clean wine, which does not cause headaches, is not too aggressive and pairs perfectly with delicate meats and cheeses.
Champagne Grand Cru Blanc de Blancs Cart Or, Claude Cazals
Claude Cazals is a historic producer of Champagne, from Mesnil-sur-Oger, which is the home of some of the best Champagne in the world (‘S’ Salon, Krug Clos du Mensil). Composed mainly Chardonnay grapes, the Cart Or is fresh, mineral and delicate at the same time, with aromas of nuts, honey and lemon peel and orange. Perfect with raw fish, scallops and goat cheese.
Champagne Brut Reserve 4 Cepages Barbichon Robert et fils
80% Pinot Noir, 10% Pinot Meunier, Pinot Blanc and Chardonnay
Robert Barbichon et fils is an organic Champagne from the Côte des Bars. The nose shows notes of almonds, yellow fruit and crusty bread, and is characterized by great freshness and flavor. Great to just drink, but also to introduce with an appetizer while dining.
