Champagne Grand Cru Blanc de Blancs Cart Or, Claude Cazals
This is an historical producer of Champagne in the village of Mesnil-sur-Oger. Some the best Champagne in the world are produced here (‘S’ Salon, Krug Clos du Mensil)
Here you’ll mainly find Chardonnay planted on a typical chalky soil. The Cart Or is fresh, mineral and soft and the same time. Hints of hazelnut, honey and lemon and orange skin. Perfect with raw fish, sea scallops, and goat cheeses.
Champagne Blanc de Noirs, Robert Fleury
100% Pinot Noir
Fleury is a small producer south of Troyes (Aube). He’s been one of the first that started to work on organic and biodinamic. So no sufites added, no selected yeast and chemicals. The result as an incredible clean and straight Champagne. No headaches then. Perfect with light meat and medium cheeses.
Champagne Extra Brut Zero, Tarlant
33% Chardonnay, 33% Pinot Noir, 33% Pinot Meunier
More than 500 years of tradition for this historical producer. This is the first Dosoage Zero ever produced in cHampagne (1971). They have 56 different small vineyards planted on 7 different type of soil. The Zero grows on a Kimmeridgian soil based on oysters fossils more the 25milions years old. This give to the Champagne that typical marine flavour. Of course to pair with oysters.
